Today in the recipe file, we are going to learn how to make a taco burger.

Whenever I think about this recipe, I think about Sloppy Joe’s but with a touch of Mexican flavor added.

This recipe you can have anytime, anyplace, anywhere and any season.

Taco Burger

Ingredients  For Taco Burger:

• 1 cup of fat-free refried beans
• 1 (4 oz) can of chopped green chilies (divided)
• 1/4 cup of chopped onion
• 1/4 of teaspoon salt (sea salt-optional)
• 1 1/2 lbs of lean ground beef (ground chicken or turkey-optional)
• 1 cup of shredded reduced-fat Cheddar cheese
• 8 (6 in) flour tortillas (warmed)
• 1 cup of chopped lettuce
• 1 medium tomato (chopped)
• 1/2 cup of salsa

Directions For Taco Burger:

1. In a bowl, combine the beans, 2 tablespoons green chilies, onion and salt. Crumble the beef over mixture and mix well. Shape into eight 5-in. patties. Top each patty with 2 tablespoons cheddar cheese; fold in half and press edges to seal, forming a half moon.
2. If grilling the burgers, coat grill rack with nonstick cooking spray before starting the grill. Grill burgers, uncovered, over medium heat or broil 4 in. from the heat for 7-9 minutes on each side or until meat is no longer pink and a meat thermometer reads 160 degrees F. Serve on tortillas with lettuce, tomato, salsa and remaining chilies.

To make this recipe complete, make sure you have sour cream, hot sauce, tortilla chips, and maybe some water on the side; when we eat this entree, I just want us to keep cool while eating this hot treat! Happy eating! Ole’!

Police have arrested a suspect in two fatal highway shootings in “The Magnolia State”  that prompted warnings a fake officer might be pulling over victims.

The fatal shootings happened last week in the north Mississippi area killing two people.

Authorities said earlier today that the fears of an impostor turned out to be unfounded. Mississippi Department of Public Safety (MDPS) spokesman Warren Strain told The Associated Press that the suspect, James D. Willie, 28, had not been posing as a police officer in the shootings.

Willie was being held on charges of kidnapping, aggravated assault, rape, and would be formally charged with two counts of capital murder, Strain said.

Willie was being held at the Tunica County jail in northwest Mississippi.

Willie was arrested Tuesday morning when authorities responded to a disturbance at an apartment. Tunica police found Willie with a woman who claimed he had raped her, a news release said. When Willie was arrested, authorities found a 9mm Ruger in his possession. Ballistic testing later found that it was the same gun used in the two highway shootings, authorities said.

Strain said Willie is a convicted felon, but he did not have details about his previous arrests.

Thomas Schlender, 74, of Raymond, NE, was found dead in his car on Interstate 55 in Panola County, MS on Tuesday,May 8, 2012 around 1:30 am. Lori Anne Carswell, 48, of Hernando, MS, was found dead near her car on Mississippi Highway 713 in nearby Tunica County, MS about 2:15 am on Friday, May 11, 2012.

Strain said authorities developed several theories during the investigation and one of those was that someone could be posing as an officer to pull people over because there was no apparent reason for the victims to pull over.

Strain also said, “If we’re going to err, we’re going to err on the side of public safety; the fact is that we got him off the street and people can go back to a level of comfort.”

Gov. Phil Bryant and Mississippi Public Safety Commissioner Albert Santa Cruz said in a statement early today that investigators spent hundreds of hours working the case and the state Bureau of Investigation and state crime lab used all the resources it had available.

“Our citizens have been terrorized by these murders and we worked tirelessly to resolve them,” Santa Cruz said.

Illinois will host Georgia Tech at the Assembly Hall on Wednesday, Nov. 28th.

The Fighting Illini and Yellow Jackets will meet for the eighth time overall and first in the ACC/Big Ten Challenge. Illinois holds a 6-1 advantage in the all-time series, including four straight wins. The teams last played on Nov. 23, 2001 in Las Vegas, NV with a 105-66 Illini victory. This will mark the first meeting between the programs in Champaign, IL since Jan. 22, 1989, when the Flyin’ Illini earned the nation’s No. 1-ranking after defeating Georgia Tech in double overtime by the score of 103-92.

Illinois owns an all-time record of 6-7 in the ACC/Big Ten Challenge, with its six Challenge wins tied for the most among Big Ten teams along with Michigan State, Ohio State, Northwestern and Wisconsin. The Illini carry a three-game winning streak in the Challenge after recording victories over Clemson University (’09), University Of North Carolina (’10), and the University Of Maryland (’11).

1942-  The 93rd Infantry activated and assigned to combat in the South Pacific; the first African- American division formed during World War II on this day.

1923- The Chip Woman’s Fortune by Willis Richardson, the first dramatic work by an African- American playwright to be mounted on Broadway, opens at the Frazee Theatre on Broadway this day.

1918- World War I “Battle of Henry Johnson”, Henry Johnson and Needham Roberts are the first Americans to be awarded the Croix de Guerre (France’s highest military award) on this day.

Peggy Marie Pence Schuster and Henry O. Freund first felt a spark between them back in 1950 when the pair attended Southwestern of Memphis (now Rhodes College).

They exercised their young love by sitting next to each other in class and attending school events together. But like many college sweethearts, their romance didn’t make the jump into the real world. Soon after graduation, Marie married someone else, and Henry, who had joined the Air Force, did the same.

Both had long marriages and three children. Henry became a pastor after his discharge from the military. In 2001, Henry, who was a widower, learned at a church meeting that Marie had also recently become widowed. So he sent her a note of condolence.

It took a decade for Marie to respond to her old college flame, but when they did get in contact, the pair started emailing each other regularly.

“It didn’t take long for the spark that had survived for 60 years to burst into flames,” Henry explained.

The two octogenarians were married over the weekend at the Canterbury Place Assisted Living in Dyersburg, TN, where they will live after their honeymoon. Together, finally, after six decades. It’s stories like this that prove that true love comes to those who wait.

Unfortunately, a memo requiring you to work on Saturday may not be the only thing on your desk making you sick.

A new study by the University of Arizona says eating lunch at your desk can actually put you at risk of developing a food-borne illness.

According to their report, the average office desktop has 100 times more bacteria than a kitchen table and 400 times more than the average toilet seat. The reason? It’s likely due to our mindset that we should keep our bathrooms and kitchens clean, yet we seem to neglect the cleanliness of out workspaces.

Eighty-three percent of Americans regularly eat at their desks, according to a survey conducted by the American Dietetic Association and ConAgra Foods’ Home Food Supply Safety program.

“With fears of a double-dip recession, more people are bringing their lunches to work instead of eating out,” says Joan Salge Blake, R.D., a spokesperson for the American Dietetic Association. “No matter how busy you may be, keep in mind that it’s just as important to practice the same food safety tips while eating at your desk as you would in your kitchen.”

The good news is there are steps you can take to avoid getting ill from chowing down at your desk, including keeping your workspace clean, placing food in a refrigerator, re-heat food appropriately if using a microwave and wash your hands.

According to dictionary.com, the definition of Sudden infant death syndrome (SIDS) (cot death, crib death) is defined as death from the sudden cessation of breathing (apnea) of a seemingly healthy infant, almost always during sleep, sometimes traceable to a chronic oxygen deficiency.

Sudden Infant Death Syndrome (SIDS) is the leading cause of death for infants between one month to twelve months of age.

Though the cause of SIDS is often unknown, one contributing factor can be unsafe sleep.

According to The American Academy Of Pediatrics here are a few guidelines for infant safe sleeping; they are as follows:

- Babies should always sleep in a crib or bassinet (not your bed or couch). The crib should be free from toys, pillows, quilts, soft bedding, or anything else.

- The safest place for the crib is your bedroom so you are close to your baby in case of a need.

- Babies should always be placed face up on their backs.

- Dress your baby lightly to avoid overheating and make sure the room is at a comfortable temperature.

- If a light blanket is necessary, tuck the sides and bottom of the blanket into the sides of the crib (the blanket should be below the baby’s arms).

- When having anyone else care for your baby, discuss these safe sleep practices to ensure they are followed at all times.

Follow these guidelines at all times and keep your bundle of joy safe and sound.

Pastor Jamal Bryant is the first of the nationally known black clergy to make an official statement about President Obama’s announcement this week in support of gay marriage.  I wondered who would make a public statement but I was surprised that it was Bryant who came forward, especially given his recent personal drama.  Bryant’s response is one that I believe is shared by most people in the black church, and that they may be disappointed by the President’s stance on this issue, but will continue to support him.  What is your opinion and it will affect your vote in November?

Singer and Academy Award winner, Jennifer Hudson, faced some of the toughest moments of her life having to relive the murders of her beloved mother, brother and nephew.  She had to endure the murder trial of the suspected and now convicted killer who had been her sister’s estranged husband.  Now that the guilty verdict has been rendered I pray that she and her sister can complete the healing process from this horrific crime and loss.

Mental health can have a dramatic effect on heart health.

When you experience stress (which is a response in your brain), the body responds by increasing: blood pressure, respiratory rate, heart rate, oxygen consumption, and blood flow to skeletal muscles.

If you experience frequent stress, you are putting your body at an increased risk for heart disease.

You may ask, “How do you combat stress?”

There are many strategies and techniques for reducing stress; but here are some pointers that you may need to know:

1) Meditate- Try sitting down in a quiet, comfortable room, and focus your attention on one word, phrase, or image in your mind. If your mind wanders, repeat this procedure over and over.

2) Read a book or listen to calming music.

3) Eat nutritiously- don’t turn to junk food, alcohol, or tobacco; this will have a negative effect on your body. Healthy food will energize you and have a positive effect on your body.

4) When feeling overwhelmed, plan & prioritize instead of trying to tackle everything at once; aslo, try to take a break from the situation.

By doing these few health steps, your heart health can improve and you can also lower your risk of heart disease. So if you can, focus on reducing your stress; your heart, will love you for it!
